What is cheese please?
It’s a place for plant-based cheese and the many creations, experiments and probably disasters that take place in my cheese cave (kitchen). I’ve spent the last decade developing recipes for my vegan cheese company Kinda Co. and also for my various cheesemaking classes. However I’m often testing out recipes that won’t make it to shop shelves (developing products to sell is a completely different beast to creating recipes to make at home) and this is a space for all those cheeses to have a time to shine, and hopefully be recreated by you!
Who am I?
Hi, hello, I’m Ellie. Long time cheese obsessive, who claimed I could never go vegan because what about cheese? When I finally gave veganism a try I found it surprisingly easy, but cheese was the one thing I really missed. Being veggie for most of my childhood in the 90’s meant I saw cheese as one of my main food groups. Totally unimpressed with the shop bought, plastic blocks of rubber masquerading as vegan cheese, I decided to have a go at making it myself.
Fast forward a few years and those early recipes led to me running a vegan cheese kitchen from a one bed flat in London, alongside my full-time job as a nanny. Skip ahead to today and I’ve grown the business to a factory in Somerset and my cheeses are sold across the UK.
Not content with just selling the stuff, I also love to teach vegan cheesemaking classes. I really enjoy showing how quick, easy and affordable it can be to make it yourself! Hopefully some of the recipes here will inspire you to give it a go too :)
